Beet Bites

Ever wonder what to do with your left over juice mulch? I juiced one litre of beet juice the other day, which I love putting in my morning shakes as beet juice is an excellent blood oxygen and energy booster.However, what to do with all the left over mulch? I feed a lot of it to my puppy; however, she can only eat so much! So, I search all over the internet for ideas and came up with this recipe! This is an excellent healthy treat for when you are craving something sweet without all the calories and sugar!

One egg or as a vegan option:

1 Tbsp Ground flax seeds

3 Tbsp water

(Mix the flax seed meal and water in a small bowl. Let the mixture sit for two
to three minutes to thicken it, before adding it to the recipe.)

1 ripe banana, mashed

1 cup beet pulp

2/3 cup almond flour

1/3 cup chia seeds

1/2 tsp cinnamon

1/8 tsp nutmeg

1 Tbsp honey

1/2 tsp vanilla extract

 

1) Preheat oven to 350 F

2) Cream together honey, flax seed mixture, and mashed banana

3) Add vanilla and spices, mix well

4) Mix in beet pulp, chia seeds, and almond flour

5) Spoon rounded teaspoons of batter onto a parchment lined cookie sheet or greased pan

6) Bake for 40 minutes or until lightly browned

7) Enjoy!
