Sunny Salsa Taco Salad

6 cups mixed greens

2 carrots, peeled and grated

½ cup broccoli sprouts

1 cup pea shoots

½ avocado, diced

1 cup cauliflower, chopped

Taco Mix:

1 ½ cups walnuts

¼ cup sunflower seeds

1 ½ tsp cumin

1 tsp coriander

1 ½ Tbsp nama shoyu

Add walnuts and sunflower seeds to food processor and grind until ground meat-like consistency achieved. Add the remaining ingredients and adjust spices to taste.

Salsa:

2 large tomatoes, diced

¼ small onion, diced

¼ cup parsley, chopped

¼ cup cilantro, chopped

1 clove garlic, crushed

Garnish with lime.
